Olivier Leflaive produces up to six cuvèes from the village of St-Aubin each year. This village is unique in that it directly borders 1er Cru vineyards of Chassagne Montrachet to the to the south and Puligny Montrachet to the east with the 1er Cru of St Aubin En Remilly directly bordering the most famous of Grand Crus; Le Montrachet.
Terroir: Saint Aubin 1er Cru ‘Chatenière’ is quite close to and north of legendary Puligny-Montrachet. The vineyard lies close to ‘En Remilly’ and ‘Les Murgers des Dents du Chien,’ easily among Saint Aubin’s finest 1er crus.
Vinification: Leflaive vinifies their St Aubin using the same techniques used for their wines produced in Meursault, Puligny Montrachet and Chassagne Montrachet. The grapes are sorted and undergo primary and secondary fermentation in Allier oak with about 15% being new. The wines are aged for 9 months prior to a light fining and bottling.
