Olivier Leflaive produces several cuvèes from the villages of Saint Aubin, Auxey-Duresses and Saint-Romain. These villages are situated close to the three major communes of the Côte de Beaune: Meursault, Puligny-Montrachet and Chassagne-Montrachet and enjoy nearly identical geology with their more famous neighbors. In general, these lesser-known appellations offer high quality Chardonnay at very attractive prices.
Terroir;
Situated behind the village of Auxey-Duresses and west of Puligny and Chassagne, you find the vineyards of Saint Romain southeast facing slopes, protected by impressive rock formations on the west and east. Elevations rise to 450 meters with soils of white marl and limestone.
Vinification: The wines are vinified in the same manner as their more famous cousins to the east. Fermentation and aging are carried out in 100% Allier oak, with about 10-15% made up of new barrels. The wines will rest in barrel for between 6 and 12 months depending on village and vintage.
