Summary: Metis Sauvignon Blanc was inspired by Pascal Jolivet and his holistic approach to winemaking in Sancerre. Using a unique and minimalistic approach to winemaking, we are able to make a wine that shows the true expression of the Constantia terroir. The name Metis refers to the collaboration between the two producers to craft this great wine. This fusion of philosophies is reflected in the flower on the label that is a hybrid of the South African Protea and French Iris.

Vinification: A pure Sauvignon Blanc that reflects a sense of place rather than technique. Grapes were harvested by hand from 4.00am from high lying blocks able to withstand the way in which the wine is made. No sulphur was added at crush and fermentation was wild. The wine was left to mature on the lees for a period of 12 months in a combination of stainless steel tank as well as 20% neutral oak barrels.

Additional Information

Bright and light in appearance with fresh citrus aromas. The wine has a round and expressive palate, full and grippy with a zesty acidity. It finishes with a long burst of mineral and lime flavors.
