Domaine Pascal Jolivet - Sancerre “Sauvage” Rouge 2006

Overview

Terroir: Sauvage Pinot Noir is issued from a parcellar selection of Pinot Noir old vines planted in Bué in 1952. The most beautiful plots are located in this area. The vine grows perfectly well on this very mineral clay-limestone soil. Vinification: Vinification and maturation in demi-muids for 15 months, no filtration before bottling.

Sauvage Pinot Noir is the expression of fruit along with spicy touch, typical of Sancerre area. The mouth is full, concentrated, ends with finesse and great elegance.

"Lightly firm, with incense and dried blueberry notes framing the red and black cherry and black tea flavors. The long, stylish finish lets the incense hint weave on, with a lightly firm note of chalk in the background. Drink now through 2010. 30 cases imported."

"Vivid red. Sexy, oak-spiced aromas of raspberry, cherry and rose, with nuances of cinnamon and black tea. Cherry-vanilla and red berry flavors show a distinct oakiness, which adds sweetness without introducing a dry or hard character. Undeniably suave in a New World and somewhat obvious manner, but I wonder what this would have been like unencumbered by the barriques, one-third of which were new."
