Domaine Pascal Jolivet - Sancerre Les Caillottes 2018
Overview
Terroir: Situated 125 miles south of Paris, the Sancerre landscape undulates at an altitude between 650 and 1,300 feet. The Loire River on the Eastern side of the hilly environment creates a relatively temperate microclimate for the wines. The Pascal Jolivet Sancerre Les Caillottes comes from an old vine 8.65 acre parcel at the top of the village of Bué-en-Sancerre. Soils are rich in limestone and exposure varies from south to southeast. Drainage is ideal leading to low yields.
Vinification: Pascal Jolivet practices a minimalist winemaking style, allowing nature to take it's course. Each of his white wines is produced using exclusively native yeasts, and entirely in temperature stainless steel. All parcels are vinified separately until final blending and bottling.
Additional Details
Vivid, fresh, and very mineral. A dry wine with balance and elegance on the palate. There’s fresh, clean floral aromas and snappy, lip quenching acidity on the palate. This is a quite pleasant wine.Technical Details

"This is from vines with an average age of 30 years planted on small chalky stones in a terroir with southern exposition. Aromas of yellow pepper, cut hay and chive. Medium-full with very good concentration. Rich mid-palate, very good acidity, excellent complexity and a well-structured finish with a distinct stony, chalky note. Enjoyable now, but will improve with another year in the bottle."
