Terroir: Situated 125 miles south of Paris, the Sancerre landscape undulates at an altitude between 650 and 1,300 feet. The Loire River on the Eastern side of the hilly environment creates a relatively temperate microclimate for the wines. The Pascal Jolivet Sancerre Les Caillottes comes from an old vine 8.65 acre parcel at the top of the village of Bué-en-Sancerre. Soils are rich in limestone and exposure varies from south to southeast. Drainage is ideal leading to low yields.
Vinification: Pascal Jolivet practices a minimalist winemaking style, allowing nature to take it’s course. Each of his white wines is produced using exclusively native yeasts, and entirely in temperature stainless steel. All parcels are vinified separately until final blending and bottling.
Vivid, fresh, and very mineral. A dry wine with balance and elegance on the palate. There’s fresh, clean floral aromas and snappy, lip quenching acidity on the palate. This is a quite pleasant wine.
