Domaine Pascal Jolivet - Pouilly Fume Indigene 2016

Overview

Terroir: Pascal Jolivet Indigène is assembled from a range of Pouilly terroirs. The wine is powerful and taut, with a pronounced minerality that complements strong flavored cuisine, and develops layered complexity and weight with aeration.

Vinification: Pascal Jolivet practices a minimalist winemaking style, allowing nature to take it's course. Each of his white wines is produced using exclusively native yeasts, and entirely in temperature stainless steel. All parcels are vinified separately until final blending and bottling.
Aged for 12 months on its lees and bottled unfiltered, this is enjoyable now, and will age well. This bottling is the quintessence of Pouilly Fume: very rich, very deep, brooding and age-worthy.

This powerful and full-bodied wine offers minerality, finesse and elegance. The nose reveals the typical gun-flint scent of the flinty terroir in Pouilly. A great wine.

"An old-vines selection from silex parcels in Tracy-sur-Loire, the 2016 Pouilly-Fumé Indigène has a clear, fresh and stony nose that is also concentrated in its subtle bright fruit aromas. Tight and fresh on the palate, with enormous grip yet also a dense core that is still locked up (as we all are in January 2021), this is a concentrated, tight and lime-fresh Pouilly that is not at its peak right now but shall improve with aeration to gain some texture and charm."
