Domaine Pascal Jolivet - Pouilly Fume Indigene 2012


Terroir: Pascal Jolivet Indigène is assembled from a range of Pouilly terroirs. The wine is powerful and taut, with a pronounced minerality that complements strong flavored cuisine, and develops layered complexity and weight with aeration.

Vinification: Pascal Jolivet practices a minimalist winemaking style, allowing nature to take it's course. Each of his white wines is produced using exclusively native yeasts, and entirely in temperature stainless steel. All parcels are vinified separately until final blending and bottling.
Aged for 12 months on its lees and bottled unfiltered, this is enjoyable now, and will age well. This bottling is the quintessence of Pouilly Fume: very rich, very deep, brooding and age-worthy.

"Light yellow. Pungent aromas of dried pear, licorice and jasmine. Shows juicy, penetrating lime pith flavors on the attack, picking up sweet notes of melon and candied ginger in the middle palate. Expands on the finish, which echoes with ginger and smoke. Nicely balanced and pleasant to drink."
