Domaine Faiveley combines the principles of modern winemaking methods with the time honored traditions that have been practiced for centuries within their 19th century cellars. Each terroir and each vintage, benefits from special attention which makes the cuvées unique. Each bottle therefore becomes the faithful reflection of its terroir.
Terroir: The lieu dit “Les Marchais” sits south, as you exit the village of Gevrey Chambertin just across the road from Clos St Jacques and Lavaut St Jacques. Domaine Faiveley farms two parcels within the vineyard for a total of 2.68 acres of east/ southeast facing vines planted in soils of clay and limestone.
Vinification: Grapes are hand harvested and sorted upon arrival at the domaine. Following a 18-20 day maceration the must undergoes primary fermentation in a combination of stainless steel and wooden vats. The young wines are aged in 70% lightly toasted new oak barrels for 14 to 16 months.
Deep ruby red hue and a powerful, pure and fruity nose. The attack is smooth and fresh with good structure and notes of ripe red fruits. The tannins are smooth, seductive and underpinned by a delicate touch of oak. A full-bodied and very elegant wine.
