Gevrey Chambertin 1er Cru La Combe aux Moines 2016


Domaine Faiveley combines the principles of modern winemaking methods with the time honored traditions that have been practiced for centuries within their 19th century cellars. Each terroir and each vintage, benefits from special attention which makes the cuvées unique. Each bottle therefore becomes the faithful reflection of its terroir.

Terroir: La Combe aux Moines or ‘The Monks Combe’ is one of the most northern vineyards in the appellation of Gevrey Chambertin bordering Les Cazetiers to the south. The 12 acre vineyard sits with an eastern exposure with soils of fossiliferous clay and white marl. Domaine Faiveley owns a single 2.96 acre parcel on the top southern border of the vineyard.

Vinification: Grapes are hand harvested and sorted upon arrival at the domaine. Following a short maceration the must undergoes primary fermentation in a combination of stainless steel and wooden vats. The young wines are aged in 70% lightly toasted new oak barrels for 14 to 16 months.

Additional Information

Intense ruby red color and an attractive nose offering fresh red fruits, sweet spice, oaky notes and a touch of smoke. The palate is smooth and persistent with fruity, oaky notes that linger on the finish. A remarkably elegant wine with silky smooth tannins and a very distinctive finish.

On the palate, the wine is medium to full-bodied, pure and elegant, with a succulent core of fruit, immensely satiny structuring tannins that caress the palate and impeccable balance. It's a strikingly graceful rendition of Combe Aux Moines, and thanks to its structural finesse, it will enjoy a broad drinking window."

    Good dark red. Pure, cool, very reticent aromas of raspberry, redcurrant and licorice plus a positive hint of mustard seed. Backward and unforthcoming on the palate as well, showing subtle saline mineral and soil tones but little easy sweetness or fleshiness. Finishes with slightly granular but ripe tannins and very good length.
