Domaine Faiveley combines the principles of modern winemaking methods with the time honored traditions that have been practiced for centuries within their 19th century cellars. Each terroir and each vintage, benefits from special attention which makes the cuvées unique. Each bottle therefore becomes the faithful reflection of its terroir.
Terroir: Chassagne Montrachet’s 1er Cru Morgeot is the largest of the appellations 1er Crus with over 143 acres under vine. Because of this vast size; the vineyard covers serveral unique terroirs with exposures ranging from east to south and soils based in chalk at the top of the vineyard and clay towards the bottom.
Vinification: Grapes are harvest by hand and sorted upon arrival at the domaine. Following primary fermentation the young wine is aged for 14-16 months in a combination of 2/3 new and 1/3 used oak barrels.
A pale yellow color. The delicate mix of fine floral aromas and woody scents makes the nose complex. The attack is round. On the palate, this wine has beautiful structure with very satisfactory acidity which counterbalances the sensation of smoothness and fullness from being raised in oak. It is rich, and really long-lasting.
