Rosé Spumante Dolce (NV)

Cavicchioli 1928

Cavicchioli 1928 Rosé Spumante Dolce is made from 100% Lambrusco grapes. In the vineyard, the vines are raised with a Guyot training system, with spurred cordon pruning, on loose mixed soils.

In the winery, grapes, harvested between September and October, are vinified on their skins and cryomacerated for 24-26 hours at a low temperature (0-2°C); the alcoholic fermentation with selected yeasts and controlled temperature, is followed by second fermentation of the Charmat method for about 20-25 days at a temperature of 12- 14°C, this is followed by the aging on its own lees for about 4-5 weeks.
