Chablis Grand Cru Les Preuses 2016


The Chablis wine region stretches along the Serein valley and across 19 communes. Chablis, known as the “Golden Gate of Burgundy”, is dedicated to the production of a clear, aromatic, fresh white wine whose name is synonym of “minerality”.

Terroir: Grand Cru Les Preuses covers 11.5 hectares sitting with an inlcined south/southeast exposure bordering Vaudésir to the east and Bougros to the west. Soils here well drained and are made up primarily kimmeridgian (clay and limestone).

Vinification: Manual harvesting is carried out at optimum ripeness levels (between 12 and 13°). The grapes are pressed in our pneumatic press and the musts then undergo cold maceration for a 5 to 7 day period before being settled and vinified. The alcoholic fermentation lasts between 15 to 18 days at the Domaine. The malolactic fermentation is usually initiated in December. The wine is aged for around 14 months including a period of time in French oak barrels if necessary. The wine is racked twice before being bottled in late autumn.

Additional Information

Light yellow with a golden core. The nose is rich yet delicate and dominated by mineral, creamy, floral, honeyed notes and dried fruits. The attack is precise followed by a powerful and distinctive mid-palate that reveals its clay-limestone terroir. Citrus notes blend with mineral and iodised flavors in this remarkable wine from an exceptional terroir.

    A lively version, offering a juicy combination of apple, lemon and mineral notes, with the acidity keeping this well-defined and long. Not built for the long haul, but shows verve for the vintage. Drink now through 2024.

    Medium yellow. In a rather virile style for Les Preuses, offering scents of spices, herbs and caraway seed. Seriously concentrated and saline but quite tight in the early going, with notes of spices and flowers providing inner-mouth lift. The acidity here is only 3.88 grams per liter but this very dry, imploded, low-fat wine has no shortage of tension. The firm-edged finish displays excellent dusty persistence. This will need aging.

    "(from a .41 ha parcel of vines planted in 1952). I very much like the admirable purity of the more elegant and airier aromas of essence of pear, apple and citrus that are also liberally laced with enough classic Chablis nuances to be persuasive. The palate impression is definitely bigger and richer than usual as there is excellent power and density to the punchy flavors that deliver very good if not truly exceptional persistence. Solid quality here."
