Chablis 1er Cru Montée de Milieu 2015


The Chablis wine region stretches along the Serein valley and across 19 communes. Chablis, known as the “Golden Gate of Burgundy”, is dedicated to the production of a clear, aromatic, fresh white wine whose name is synonym of “minerality”.

Terroir: 1er Cru Montée de Mileu is a 34 hectare vineyard just southeast of the Grand Crus and enjoys a similar south/southeast exposure as Blanchot. Soils here well drained and are made up primarily kimmeridgian (clay and limestone). This wine is sourced from a single 2.75 hectare parcel.

Vinification: Manual harvesting is carried out at optimum ripeness levels (between 12 and 13°). The grapes are pressed in our pneumatic press and the musts then undergo cold maceration for a 5 to 7 day period before being settled and vinified. The alcoholic fermentation lasts between 15 to 18 days at the Domaine. The malolactic fermentation is usually initiated in December. The wine is aged for around 14 months including a period of time in French oak barrels if necessary. The wine is racked twice before being bottled in late autumn.

Bright and clear with delicate green reflections. This highly aromatic 1er Cru offers ripe citrus fruits and white flowers. The palate is well-rounded with remarkably persistent aromas.

    From just south of the run of Grand Cru vineyards, this wine is ripe full of sun as well as acidity. Juicy with swathes of lemon and crisp green apple fruit, it's textured, tight and likely to age well. The estate has been owned by Nuits-St.-Georges-based Domaine Faiveley since 2014. Drink from 2020.

    The 2015 Mont de Milieu has a taut and linear, mineral-driven bouquet with touches of smoke and flint developing in the glass. The palate is well defined with a fine bead of acidity and veins of mango and passion fruit that complement the edgy, mineral core, all segueing into a precise and very focused finish. This is a very well made and quite delicious Mont de Milieu. Anticipated maturity: 2018-2028.

    Bright light yellow. Very ripe, deep yellow fruits dominate the nose. Fruit-driven and rather opulent--in fact, almost honeyed--but without quite the suavity and balance of the Vaillons. Not heavy but not showing much today. Finishes a bit more phenolic, with a slight dryness.

    This is very Mont de Milieu with its mildly exotic and vaguely Viognier-like aromas that introduce big, rich and impressively scaled flavors that exhibit fine mid-palate concentration before culminating in a softly mineral-inflected and saline finish that delivers both very solid depth and length.

    (this cuve consists of two 600-liter casks plus one 50-hectoliter tank): Lemon-limey lift to the aromas of stone and licorice. A fairly rich, pliant wine, not quite exotic but showing inviting spicy high notes. Dry, essentially classic Chablis with a rather tight-grained texture and good length. One can smell the acidity here, even if it's technically low. "It projects a balance of acidity and alcohol, like a whiskey," says Bailly.
